Ingredients

  • Potatoes: 4 medium russet potatoes, peeled and diced
  • Chili: 1 can (15 oz) of chili (with or without beans, your choice)
  • Cheese: 1 cup shredded cheddar cheese
  • Onion: 1 medium onion, diced
  • Garlic: 2 cloves garlic, minced
  • Olive Oil: 2 tablespoons
  • Spices: 1 teaspoon chili powder, 1/2 teaspoon cumin, salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.
  3. Add diced onion and minced garlic to the skillet, cooking for an additional 3-4 minutes until the onion is translucent.
  4. Stir in the chili, chili powder, cumin, salt, and pepper, mixing well to combine.
  5. Reduce heat to low and sprinkle shredded cheddar cheese over the top. Cover the skillet and let it cook for 5 minutes, or until the cheese is melted and bubbly.
  6. Remove from heat and let it sit for a couple of minutes before serving.
