A refreshing summer dessert featuring a chilled tart filled with sweet peaches and fragrant lavender.

- 1 pre-made tart shell
- 4 ripe peaches, sliced
- 1 cup heavy cream
- 1/2 cup sugar
- 2 tablespoons dried lavender
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- Place the tart shell in the oven and bake for 10 minutes until lightly golden.
- In a saucepan, combine heavy cream, sugar, and dried lavender. Heat over medium until sugar dissolves, then remove from heat and let steep for 15 minutes.
- Strain the lavender cream into a bowl, discarding the lavender buds.
- Add vanilla extract and lemon juice to the cream mixture and stir well.
- Pour the cream mixture into the cooled tart shell and refrigerate for at least 2 hours until set.
- Once set, arrange the sliced peaches on top of the tart before serving.
Notes
- For a stronger lavender flavor, increase the amount of dried lavender.
- Serve chilled for the best taste.
- This tart can be made a day in advance.
