- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Chocolate cookies (for layering)
Instructions
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream together butter, brown sugar, granulated sugar, and vanilla until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Fold in mini chocolate chips.
- In a separate bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
- Layer chocolate cookies at the bottom of a serving dish.
- Spread a layer of cookie dough mixture over the cookies.
- Add a layer of whipped cream on top of the cookie dough.
- Repeat the layers until all ingredients are used, finishing with whipped cream on top.
- Chill in the refrigerator for at least 4 hours or overnight before serving.
Notes
- Make sure to let the cake chill for the best texture.
- Feel free to add more chocolate chips for extra flavor.
- This cake can be made a day in advance.
