Ingredients
- Dark Chocolate: 8 oz, chopped
- Heavy Cream: 2 cups, divided
- Granulated Sugar: 1/4 cup
- Egg Whites: 4 large
- Vanilla Extract: 1 tsp
- Salt: a pinch
Instructions
- In a heatproof bowl, melt the chopped dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whip 1 cup of heavy cream with 2 tablespoons of sugar until soft peaks form.
- In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Gently fold the whipped cream into the melted chocolate until combined.
- Carefully fold in the beaten egg whites until no white streaks remain, being cautious not to deflate the mixture.
- Divide the mousse into serving dishes and refrigerate for at least 2 hours or until set.
- Before serving, whip the remaining heavy cream with the vanilla extract and remaining sugar until soft peaks form, and dollop on top of the mousse.
Notes
- This mousse can be made a day in advance and stored in the refrigerator.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- For a lighter version, substitute half of the heavy cream with Greek yogurt.
