Ingredients

  • Shortbread Base:
    • 1 cup unsalted butter, softened
    • 1/2 cup granulated sugar
    • 2 cups all-purpose flour
    • 1/4 teaspoon salt
  • Topping:
    • 1 cup semi-sweet chocolate chips
    • 1/2 cup toffee bits
    • 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Gradually add the flour and salt, mixing until just combined.
  4. Press the shortbread mixture evenly into the bottom of a greased 9×13 inch baking pan.
  5. Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden.
  6. Remove from the oven and immediately sprinkle the chocolate chips over the hot shortbread base. Let sit for 5 minutes to melt.
  7. Spread the melted chocolate evenly over the shortbread, then sprinkle with toffee bits and chopped pecans.
  8. Allow to cool completely before cutting into bars, about 1 hour.

Notes

  • These bars can be made ahead of time and stored in an airtight container for up to 5 days.
  • For longer storage, freeze the bars for up to 3 months. Thaw in the refrigerator before serving.
