A delicious and refreshing dish featuring marinated steak served over rice with a zesty cilantro lime sauce.
Ingredients

- 1 lb flank steak
- 1 cup rice
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup bell peppers, sliced
- 1 avocado, sliced
Instructions
- Marinate the flank steak in lime juice, garlic, cumin, chili powder, salt, and pepper for at least 30 minutes.
- Cook the rice according to package instructions.
- Heat olive oil in a skillet over medium-high heat and cook the marinated steak for about 4-5 minutes on each side or until desired doneness.
- Remove the steak from the skillet and let it rest for a few minutes before slicing.
- In the same skillet, sauté the bell peppers until tender.
- Assemble the bowls by placing rice at the bottom, followed by sliced steak, sautéed bell peppers, avocado, and a sprinkle of fresh cilantro.
- Drizzle with additional lime juice if desired and serve immediately.
Notes
- For a spicier kick, add jalapeños to the sautéed bell peppers.
- This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
- Feel free to substitute the flank steak with chicken or tofu for a different protein option.
