Description

A delicious and refreshing dish featuring marinated steak served over rice with a zesty cilantro lime sauce.


Ingredients

  • 1 lb flank steak
  • 1 cup rice
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup bell peppers, sliced
  • 1 avocado, sliced

Instructions

  1. Marinate the flank steak in lime juice, garlic, cumin, chili powder, salt, and pepper for at least 30 minutes.
  2. Cook the rice according to package instructions.
  3. Heat olive oil in a skillet over medium-high heat and cook the marinated steak for about 4-5 minutes on each side or until desired doneness.
  4. Remove the steak from the skillet and let it rest for a few minutes before slicing.
  5. In the same skillet, sauté the bell peppers until tender.
  6. Assemble the bowls by placing rice at the bottom, followed by sliced steak, sautéed bell peppers, avocado, and a sprinkle of fresh cilantro.
  7. Drizzle with additional lime juice if desired and serve immediately.

Notes

  • For a spicier kick, add jalapeños to the sautéed bell peppers.
  • This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Feel free to substitute the flank steak with chicken or tofu for a different protein option.
