  • For the Steak:
    • 1 lb flank steak
    • 1/4 cup fresh lime juice
    • 1/4 cup olive oil
    • 1/4 cup chopped fresh cilantro
    • 3 cloves garlic, minced
    • 1 tsp ground cumin
    • 1 tsp chili powder
    • Salt and pepper to taste
  • For the Bowls:
    • 2 cups cooked rice (white or brown)
    • 1 cup black beans, rinsed and drained
    • 1 cup corn (fresh or frozen)
    • 1 cup cherry tomatoes, halved
    • 1 avocado, sliced
    • 1/2 cup diced red onion
    • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper to create the marinade.
  2. Place the flank steak in a resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.
  3. Preheat a grill or grill pan to medium-high heat (about 400°F).
  4. Remove the steak from the marinade and discard the marinade. Grill the steak for 5-7 minutes on each side, or until it reaches your desired doneness (medium-rare is about 135°F).
  5. Let the steak rest for 5 minutes before slicing it against the grain into thin strips.
  6. In serving bowls, layer the cooked rice, black beans, corn, cherry tomatoes, avocado, and red onion.
  7. Top each bowl with sliced steak and sprinkle with feta cheese if desired.
  8. Garnish with additional cilantro and lime wedges before serving.

Notes

  • This dish can be made ahead by marinating the steak and preparing the toppings in advance. Store the components separately in airtight containers in the refrigerator for up to 3 days.
  • Leftover steak can be stored in the fridge for up to 3 days and can be reheated in a skillet or microwave.
