- 1 lb flank steak
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 1/4 cup chopped fresh cilantro
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- For the Bowls:
- 2 cups cooked rice (white or brown)
- 1 cup black beans, rinsed and drained
- 1 cup corn (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/2 cup diced red onion
- 1/4 cup crumbled feta cheese (optional)
Instructions
- In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper to create the marinade.
- Place the flank steak in a resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.
- Preheat a grill or grill pan to medium-high heat (about 400°F).
- Remove the steak from the marinade and discard the marinade. Grill the steak for 5-7 minutes on each side, or until it reaches your desired doneness (medium-rare is about 135°F).
- Let the steak rest for 5 minutes before slicing it against the grain into thin strips.
- In serving bowls, layer the cooked rice, black beans, corn, cherry tomatoes, avocado, and red onion.
- Top each bowl with sliced steak and sprinkle with feta cheese if desired.
- Garnish with additional cilantro and lime wedges before serving.
Notes
- This dish can be made ahead by marinating the steak and preparing the toppings in advance. Store the components separately in airtight containers in the refrigerator for up to 3 days.
- Leftover steak can be stored in the fridge for up to 3 days and can be reheated in a skillet or microwave.
- For a low-carb option, substitute rice with cauliflower rice.
