- 3 ripe bananas
- 1/4 cup melted butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 tablespoon cinnamon
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Mash the ripe bananas in a mixing bowl with a fork until smooth.
- Stir in the melted butter.
- Mix in brown sugar and granulated sugar until integrated.
- Beat in the egg and vanilla extract.
- Sprinkle baking soda and salt over the mixture and mix evenly.
- Add flour gradually, stirring until just combined.
- Mix cinnamon with a bit of sugar in another bowl for the swirl.
- Pour half of the batter into the loaf pan and sprinkle with half of the cinnamon mixture.
- Add the remaining batter on top and sprinkle with the rest of the cinnamon mixture.
- Gently swirl the batter with a knife to create patterns.
- Bake for 60-65 minutes or until a toothpick comes out clean.
- Cool before removing from the pan.
Notes
For a different flavor, you can substitute coconut oil for butter or add chocolate chips to the batter.
