- 1 cup shredded unsweetened coconut
- 1/2 cup panko breadcrumbs

- 2 large eggs, beaten

- 1 tablespoon olive oil
- For the Pineapple Salsa:
- 1 cup fresh pineapple, diced

Instructions
- Preheat your oven to 400°F (200°C).
- In a shallow dish, combine the flour, salt, and pepper.
- In another dish, beat the eggs.
- In a third dish, mix the shredded coconut and panko breadcrumbs.
- Dredge each salmon fillet in the flour mixture, then dip in the beaten eggs, and finally coat with the coconut-panko mixture.
- Place the coated salmon fillets on a baking sheet lined with parchment paper.
