Description

A delicious and tropical dish featuring salmon coated in crispy coconut and served with a refreshing pineapple salsa.


Ingredients

  • 4 salmon fillets
  • 1 cup shredded coconut
  • 1/2 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced pineapple
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix shredded coconut, breadcrumbs, salt, and pepper.
  3. Dip each salmon fillet in the beaten eggs, then coat with the coconut mixture.
  4. Place the coated salmon on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes or until the salmon is cooked through and the coconut is golden brown.
  6. In another bowl, combine diced pineapple, red onion, cilantro, and lime juice to make the salsa.
  7. Serve the coconut crusted salmon topped with pineapple salsa.

Notes

  • For extra flavor, marinate the salmon in lime juice for 30 minutes before coating.
  • Serve with a side of rice or salad for a complete meal.
