Description

A delicious and refreshing corn pasta salad featuring crispy bacon and a creamy pesto dressing, perfect for summer gatherings.


Ingredients

  • 8 oz pasta
  • 1 cup corn (fresh or frozen)
  • 4 slices bacon
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cup creamy pesto dressing
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a skillet, cook the bacon until crispy. Remove and crumble.
  3. In a large bowl, combine the cooked pasta, corn, cherry tomatoes, red onion, and crumbled bacon.
  4. Add the creamy pesto dressing and mix well.
  5. Season with salt and pepper to taste.
