- 8 cups baked cornbread, cubed into 1-inch pieces
- 1/2 cup unsalted butter
- 1 1/2 cups white or yellow onion, finely chopped
- 1 1/2 cups celery, chopped
- 3 to 4 cloves garlic, finely minced
- 3 tablespoons fresh parsley, finely chopped
- 2 tablespoons fresh sage, finely chopped
- 2 tablespoons fresh thyme, finely chopped
- 2 teaspoons fresh rosemary, finely chopped
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon freshly ground black pepper (or to taste)
- 1 cup reduced or low sodium chicken broth
- 3/4 cup whole milk
- 2 large eggs, lightly beaten
Instructions
- Bake your cornbread according to the Homemade Skillet Cornbread recipe (or use a boxed mix). Let cool and cube into 1-inch pieces.
- Preheat the oven to 400°F and grease a 2-quart baking dish. Add the cornbread cubes.
- Melt the butter in a large sauté pan over medium-high heat. Add onions and celery, cooking until softened, about 4-5 minutes.
- Add minced garlic, parsley, sage, thyme, rosemary, salt, and pepper. Simmer for 2 minutes.
- Stir in chicken broth and milk, then remove from heat.
- Drizzle a third of the warm mixture into whisked eggs, whisking constantly to temper the eggs.
- Combine the egg mixture back into the sauté pan and mix well.
- Pour the mixture over the cornbread cubes, ensuring to coat evenly without stirring.
- Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 20 minutes or until golden brown.
- Serve immediately or cool slightly before enjoying.
Notes
Make this stuffing ahead by preparing cornbread and sautéed mixture a day prior. Combine just before baking for best texture.
