  • 8 cups baked cornbread, cubed into 1-inch pieces
  • 1/2 cup unsalted butter
  • 1 1/2 cups white or yellow onion, finely chopped
  • 1 1/2 cups celery, chopped
  • 3 to 4 cloves garlic, finely minced
  • 3 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh sage, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 2 teaspoons fresh rosemary, finely chopped
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper (or to taste)
  • 1 cup reduced or low sodium chicken broth
  • 3/4 cup whole milk
  • 2 large eggs, lightly beaten

Instructions

  1. Bake your cornbread according to the Homemade Skillet Cornbread recipe (or use a boxed mix). Let cool and cube into 1-inch pieces.
  2. Preheat the oven to 400°F and grease a 2-quart baking dish. Add the cornbread cubes.
  3. Melt the butter in a large sauté pan over medium-high heat. Add onions and celery, cooking until softened, about 4-5 minutes.
  4. Add minced garlic, parsley, sage, thyme, rosemary, salt, and pepper. Simmer for 2 minutes.
  5. Stir in chicken broth and milk, then remove from heat.
  6. Drizzle a third of the warm mixture into whisked eggs, whisking constantly to temper the eggs.
  7. Combine the egg mixture back into the sauté pan and mix well.
  8. Pour the mixture over the cornbread cubes, ensuring to coat evenly without stirring.
  9. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 20 minutes or until golden brown.
  10. Serve immediately or cool slightly before enjoying.

Notes

Make this stuffing ahead by preparing cornbread and sautéed mixture a day prior. Combine just before baking for best texture.
