Ingredients

  • Potatoes: 2 large russet potatoes, peeled and diced into 1/2-inch cubes
  • Corned Beef: 1 cup cooked corned beef, chopped
  • Onion: 1 medium onion, finely chopped
  • Bell Peppers: 1 red bell pepper and 1 green bell pepper, diced
  • Garlic: 2 cloves garlic, minced
  • Olive Oil: 2 tablespoons for frying
  • Salt: to taste
  • Pepper: to taste
  • Fresh Parsley: 2 tablespoons, chopped for garnish

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
