Description

This Cowboy Beef & Potato Casserole is a hearty dish that combines tender ground beef with creamy layers of potatoes, all enveloped in a rich, savory sauce. The crispy topping adds a delightful crunch, while the flavors meld together to create a comforting experience that warms the soul.

  • For the Casserole:
    • 1 lb ground beef
    • 4 medium potatoes, thinly sliced
    • 1 medium onion, diced
    • 2 cups shredded cheddar cheese
    • 1 can (10.5 oz) cream of mushroom soup
    • 1 cup milk
    • 1 teaspoon garlic powder
    • 1 teaspoon paprika
    • Salt and pepper to taste
  • For the Topping:
    • 1 cup crushed cornflakes
    • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked, about 5-7 minutes. Drain excess fat.
  3. Add diced onion to the skillet and sauté until translucent, about 3-4 minutes.
  4. In a large bowl, mix the cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper.
  5. Layer half of the sliced potatoes in a greased 9×13 inch baking dish.
  6. Spread half of the beef mixture over the potatoes, followed by half of the soup mixture.
  7. Repeat the layers with the remaining potatoes, beef, and soup mixture.
  8. Sprinkle shredded cheddar cheese on top.
  9. In a small bowl, combine crushed cornflakes with melted butter and sprinkle over the cheese layer.
  10. Bake in the preheated oven for 45-50 minutes, or until the potatoes are tender and the top is golden brown.
