Succulent chicken breasts stuffed with a creamy brie center and sweet-tart cranberries, all enveloped in golden panko breadcrumbs.

- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 cup fresh cranberries
- 1/4 cup honey
- 1/4 cup orange juice
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces brie cheese (rind removed and cut into small pieces)
- 1/4 cup chopped fresh parsley
- 1/2 cup panko breadcrumbs
- 1 tablespoon butter, melted
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a medium saucepan over medium heat. Add cranberries and cook until they begin to soften, about 5 minutes.
- Stir in honey, orange juice, cinnamon, ginger, salt, and pepper. Simmer for 3-4 minutes until thickened, then remove from heat.
- Cut a pocket in each chicken breast, being careful not to slice all the way through.
- Stuff each chicken breast with brie cheese and spoon a portion of the cooled cranberry mixture into each.
- Secure openings with toothpicks.
- Sear the stuffed chicken in a large, oven-safe skillet over medium-high heat for 2-3 minutes on each side.
- Combine panko breadcrumbs and melted butter in a small bowl.
- Spread the panko mixture over each chicken breast.
- Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
- Rest for 5 minutes before serving, and sprinkle with parsley.
Notes
Make ahead by preparing the cranberry mixture a day in advance. Adjust spices and sweetness to taste.
