Cranberry Brie Stuffed Chicken

Description

Succulent chicken breasts stuffed with a creamy brie center and sweet-tart cranberries, all enveloped in golden panko breadcrumbs.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese (rind removed and cut into small pieces)
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a medium saucepan over medium heat. Add cranberries and cook until they begin to soften, about 5 minutes.
  3. Stir in honey, orange juice, cinnamon, ginger, salt, and pepper. Simmer for 3-4 minutes until thickened, then remove from heat.
  4. Cut a pocket in each chicken breast, being careful not to slice all the way through.
  5. Stuff each chicken breast with brie cheese and spoon a portion of the cooled cranberry mixture into each.
  6. Secure openings with toothpicks.
  7. Sear the stuffed chicken in a large, oven-safe skillet over medium-high heat for 2-3 minutes on each side.
  8. Combine panko breadcrumbs and melted butter in a small bowl.
  9. Spread the panko mixture over each chicken breast.
  10. Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  11. Rest for 5 minutes before serving, and sprinkle with parsley.

Notes

Make ahead by preparing the cranberry mixture a day in advance. Adjust spices and sweetness to taste.
