Description

Cranberry Crumb Bars are a delightful treat that combines a buttery, crumbly crust with a tart and juicy cranberry filling. Each bite offers a perfect balance of sweetness and tanginess, with a satisfying crunch from the crumb topping that melts in your mouth.

  • For the crust and topping:
    • 1 cup all-purpose flour
    • 1/2 cup rolled oats
    • 1/2 cup brown sugar, packed
    • 1/2 cup unsalted butter, melted
    • 1/4 teaspoon salt
  • For the filling:
    • 2 cups fresh or frozen cranberries
    • 1/2 cup granulated sugar
    • 1 tablespoon cornstarch
    • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, oats, brown sugar, melted butter, and salt until crumbly.
  3. Press half of the mixture into the bottom of a greased 8×8 inch baking pan to form the crust.
  4. In another bowl, mix cranberries, granulated sugar, cornstarch, and lemon juice until well combined.
  5. Spread the cranberry mixture evenly over the crust in the baking pan.
  6. Sprinkle the remaining crumb mixture over the cranberry filling.
  7. Bake for 30-35 minutes, or until the top is golden brown and the filling is bubbly.
  8. Allow to cool completely before cutting into bars.

Notes

  • These bars can be made ahead of time and stored in the refrigerator for up to 5 days.
  • For longer storage, freeze the bars in an airtight container for up to 3 months.
  • You can substitute blueberries or raspberries for cranberries if desired.
