    • 1 cup cornmeal

    • 1 cup buttermilk
    • 2 large eggs

  • Crawfish Mixture:
    • 1 pound cooked crawfish tails, peeled
    • 1/2 cup diced bell pepper
    • 1/2 cup diced onion
    • 1/4 cup diced celery
    • 1 teaspoon Cajun seasoning
    • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine cornmeal, flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together buttermilk, eggs, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a skillet, sauté the bell pepper, onion, and celery over medium heat until softened, about 5 minutes.
  6. Add the crawfish and Cajun seasoning to the skillet, cooking for an additional 2 minutes.
  7. Fold the crawfish mixture and cheddar cheese into the cornbread batter.
  8. Pour the batter into a greased 9×13 inch baking dish and smooth the top.
  9. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
