Ingredients

- 5 cups corn (fresh or frozen)
- 8 ounces cream cheese (cubed or sliced)
- 4 tablespoons unsalted butter (sliced)
- ½ cup heavy cream
- 1 ½ teaspoons garlic powder
- 1 ½ teaspoons onion powder
- 1 teaspoon kosher salt (or to taste)
- ½ teaspoon ground thyme
- ½ teaspoon freshly ground black pepper (or to taste)
- Fresh parsley (finely minced, optional for garnishing)
Instructions
- Combine all the ingredients except for the parsley in a large skillet or Dutch oven.
- Cover with a lid and heat over medium heat for about 15 minutes, stirring halfway.
- Remove the lid and stir everything together, cooking for an additional 5 minutes until creamy.
- Taste and adjust seasoning if needed.
- Garnish with fresh parsley before serving. Enjoy warm!
Notes
Store leftovers in an airtight container for up to three days. Can be frozen for up to two months. Reheat gently, adding cream if needed. For a vegan version, substitute cream cheese and heavy cream with plant-based alternatives.
