Ingredients

  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced chicken and cook until browned and cooked through.
  3. Stir in the orzo and broccoli, cooking for a few minutes.
  4. Add the chicken broth and bring to a boil.
  5. Reduce heat and simmer until the orzo is tender and the liquid is mostly absorbed.
  6. Stir in the heavy cream, lemon juice, and lemon zest.
