  • 4 medium sweet potatoes
  • 1 cup mushrooms, chopped
  • 2 cups fresh spinach
  • 1/2 cup cream cheese
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare each sweet potato by piercing with a fork, then bake on a baking sheet for 45-60 minutes until fork-tender.
  3. Sauté olive oil in a skillet over medium heat, add minced garlic and mushrooms, cooking until golden for about 5-7 minutes.
  4. Add spinach and cook until wilted for about 2-3 minutes.
  5. Create the creamy mixture by removing from heat and mixing in cream cheese and shredded cheese until melted.
  6. Prep the baked sweet potatoes by slicing them open gently and fluffing the insides.
  7. Fill each sweet potato with the creamy mushroom and spinach mixture.
