- 4 medium sweet potatoes
- 1 cup mushrooms, chopped
- 2 cups fresh spinach
- 1/2 cup cream cheese
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare each sweet potato by piercing with a fork, then bake on a baking sheet for 45-60 minutes until fork-tender.
- Sauté olive oil in a skillet over medium heat, add minced garlic and mushrooms, cooking until golden for about 5-7 minutes.
- Add spinach and cook until wilted for about 2-3 minutes.
- Create the creamy mixture by removing from heat and mixing in cream cheese and shredded cheese until melted.
- Prep the baked sweet potatoes by slicing them open gently and fluffing the insides.
- Fill each sweet potato with the creamy mushroom and spinach mixture.
Notes
For a dairy-free option, substitute cream cheese with plant-based alternatives. Feel free to experiment with other greens or add cooked bacon for flavor.
