Ingredients

  • Pasta: 12 oz rotini or penne pasta
  • Ground Beef: 1 lb lean ground beef
  • Rotel Tomatoes: 1 can (10 oz) diced tomatoes with green chilies
  • Cream Cheese: 8 oz, softened
  • Cheddar Cheese: 1 cup shredded sharp cheddar
  • Onion: 1 medium, diced
  • Garlic: 2 cloves, minced
  • Beef Broth: 1 cup
  • Olive Oil: 1 tablespoon
  • Spices: 1 teaspoon chili powder, 1 teaspoon cumin, salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
