  • Shrimp Filling:
    • 1 pound shrimp, peeled and deveined

    • 1 teaspoon lemon juice
  • Rolls:
    • 8 large spring roll wrappers
    • 1 egg, beaten (for sealing)
  • Frying:
    • Vegetable oil, for frying

Instructions

  1. In a mixing bowl, combine the shrimp, cream cheese, mozzarella, garlic, parsley, and lemon juice. Mix until well combined.
  2. Lay a spring roll wrapper on a clean surface and place 2 tablespoons of the shrimp mixture in the center.
  3. Fold the sides of the wrapper over the filling, then roll it tightly from the bottom up, sealing the edge with beaten egg.
  4. Repeat with the remaining wrappers and filling.
  5. Heat vegetable oil in a deep pan to 350°F (175°C).
  6. Carefully add the rolls to the hot oil, frying in batches until golden brown, about 3-4 minutes per side.
  7. Remove the rolls and drain on paper towels.
  8. Serve hot with your favorite dipping sauce.
