Description

Creamy Tuscan Shrimp and Spinach Pasta is a luxurious dish that combines succulent shrimp with tender spinach in a rich, velvety sauce. The flavors meld beautifully, creating a delightful experience that is both comforting and indulgent, with a hint of garlic and a touch of parmesan that elevates every bite.

Ingredients

  • Pasta: 8 oz fettuccine or linguine
  • Shrimp: 1 lb large shrimp, peeled and deveined
  • Vegetables: 2 cups fresh spinach, 1 cup cherry tomatoes, halved
  • Sauce: 1 cup heavy cream, 1/2 cup grated parmesan cheese, 3 cloves garlic, minced, 1 tsp Italian seasoning, salt and pepper to taste
  • Oil: 2 tbsp olive oil

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque.
  4. Stir in the cherry tomatoes and spinach, cooking until the spinach wilts, about 2 minutes.
  5. Pour in the heavy cream and bring to a gentle simmer, then stir in the parmesan cheese and Italian seasoning.
  6. Season with salt and pepper to taste, then add the cooked pasta to the skillet, tossing to combine.
  7. Cook for an additional 2-3 minutes until everything is heated through and the sauce thickens slightly.
  8. Serve immediately, garnished with extra parmesan if desired.

Notes

  • This dish can be made ahead of time; simply reheat gently on the stove with a splash of cream to loosen the sauce.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a lighter version, substitute heavy cream with half-and-half or a plant-based cream.
