  • For the Quesadillas:
    • 2 large flour tortillas
    • 1 cup shredded Monterey Jack cheese
    • 1 cup shredded cheddar cheese
    • 1/2 pound steak, thinly sliced
    • 1/2 pound shrimp, peeled and deveined
    • 1 tablespoon olive oil
    • 1 tablespoon Creole seasoning
  • For the Garnish:
    • 1/4 cup sour cream
    • 1/4 cup fresh cilantro, chopped
    • 1 lime, cut into wedges

Instructions

  1. In a skillet, heat olive oil over medium-high heat. Add the sliced steak and cook for 3-4 minutes until browned.
  2. Add the shrimp and Creole seasoning, cooking for an additional 2-3 minutes until the shrimp are pink and opaque.
  3. Remove the steak and shrimp mixture from the skillet and set aside.
  4. In the same skillet, place one tortilla and sprinkle half of the Monterey Jack and cheddar cheese on one half of the tortilla.
  5. Layer the steak and shrimp mixture over the cheese, then top with the remaining cheese.
  6. Fold the tortilla in half and cook for 2-3 minutes on each side until golden brown and the cheese is melted.
  7. Repeat with the second tortilla.
  8. Slice into wedges and serve with sour cream, cilantro, and lime wedges.
