Description

These Crispy Baked Sweet Potato Bites are a delightful combination of crunchy exterior and tender, sweet interior, enhanced by a rich, creamy herb butter. Each bite bursts with a savory flavor profile, thanks to the aromatic herbs and the nutty essence of Parmesan cheese.


Ingredients

  • Sweet Potatoes: 2 large, peeled and cut into 1-inch cubes
  • Olive Oil: 3 tablespoons, for tossing
  • Salt: 1 teaspoon, to taste
  • Pepper: 1/2 teaspoon, to taste
  • Parmesan Cheese: 1/2 cup, grated
  • Fresh Herbs: 2 tablespoons each of chopped parsley and thyme
  • Butter: 1/2 cup (1 stick), softened

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy on the outside.
  5. While the sweet potatoes are baking, prepare the herb butter by mixing softened butter, Parmesan cheese, parsley, and thyme in a bowl until well combined.
  6. Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes.
  7. Serve the sweet potato bites warm, topped with a dollop of the creamy herb butter.
