Description

  • For the Chimichangas:
    • 8 large flour tortillas
    • Vegetable oil for frying

Instructions

  1. In a large skillet over medium heat, brown the ground beef with the diced onion and minced garlic until the beef is fully cooked, about 7-10 minutes.
  2. Drain excess fat, then stir in chili powder, cumin, salt, and pepper. Cook for an additional 2 minutes.
  3. Remove from heat and mix in the shredded cheddar cheese until melted and well combined.
  4. Warm the flour tortillas in a microwave for 30 seconds to make them pliable.
  5. Place about 1/4 cup of the beef mixture in the center of each tortilla, fold in the sides, and roll tightly to form a chimichanga.
  6. In a deep skillet, heat vegetable oil to 350°F (175°C).
  7. Carefully place the chimichangas in the hot oil, frying for 3-4 minutes on each side until golden brown and crispy.
  8. Remove from oil and drain on paper towels before serving.
