Description

Crispy Gnocchi with Spinach and Feta offers a delightful contrast of textures, with the gnocchi’s golden, crispy exterior giving way to a soft, pillowy interior. The vibrant spinach adds a fresh, earthy flavor, while the tangy feta cheese provides a creamy richness that elevates each bite.

Ingredients

Scale
  • For the Gnocchi:
    • 1 pound potato gnocchi
  • For the Spinach and Feta:
    • 2 cups fresh spinach, chopped
    • 1 cup feta cheese, crumbled
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • Salt and pepper to taste

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add the potato gnocchi to the skillet and cook for 5-7 minutes, stirring occasionally, until they are golden brown and crispy.
  3. While the gnocchi is cooking, in a separate pan, sauté the minced garlic in a little olive oil over medium heat until fragrant, about 1 minute.
  4. Add the chopped spinach to the garlic and cook until wilted, about 2-3 minutes.
  5. Once the gnocchi is crispy, add the sautéed spinach and garlic to the skillet, stirring to combine.
  6. Sprinkle the crumbled feta cheese over the top and cook for an additional 2 minutes until the cheese is slightly melted.
  7. Season with salt and pepper to taste, then serve immediately.

Notes

  • This dish can be made ahead by cooking the gnocchi and sautéing the spinach separately, then combining just before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a dairy-free option, substitute feta with a vegan cheese alternative.
