Ingredients

  • 2 cups almond flour
  • 1/4 cup cream cheese, softened
  • 2 eggs
  • 1/4 cup blueberries (fresh or frozen)
  • 1/4 cup sweetener (like erythritol or stevia)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Butter or coconut oil for frying

Instructions

  1. Combine 2 cups of almond flour, 1/4 cup of softened cream cheese, 2 eggs, 1/4 cup of sweetener, 1 teaspoon of vanilla extract, and 1/2 teaspoon of baking powder in a mixing bowl. Whisk together until smooth.
  2. Heat a non-stick skillet over medium heat and add butter or coconut oil to coat the surface.
  3. Pour a small amount of the batter into the skillet, spreading it out to form a thin layer (about six inches in diameter).
  4. Cook for 1-2 minutes until the edges turn golden and the center sets slightly. Gently flip and cook until golden brown on the other side.
  5. Remove the roll from the skillet and sprinkle blueberries on top while warm.
  6. Carefully roll it up, seam-side down on a plate, and repeat with remaining batter and blueberries.
  7. Serve immediately, optionally with extra blueberries or whipped cream.

Notes

Make-ahead batter can be stored in the refrigerator for up to 24 hours. For air fryer cooking, set to 350°F and cook for 8-10 minutes.
