- 1/4 cup cream cheese, softened
- 2 eggs
- 1/4 cup blueberries (fresh or frozen)
- 1/4 cup sweetener (like erythritol or stevia)
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Butter or coconut oil for frying
Instructions
- Combine 2 cups of almond flour, 1/4 cup of softened cream cheese, 2 eggs, 1/4 cup of sweetener, 1 teaspoon of vanilla extract, and 1/2 teaspoon of baking powder in a mixing bowl. Whisk together until smooth.
- Heat a non-stick skillet over medium heat and add butter or coconut oil to coat the surface.
- Pour a small amount of the batter into the skillet, spreading it out to form a thin layer (about six inches in diameter).
- Cook for 1-2 minutes until the edges turn golden and the center sets slightly. Gently flip and cook until golden brown on the other side.
- Remove the roll from the skillet and sprinkle blueberries on top while warm.
- Carefully roll it up, seam-side down on a plate, and repeat with remaining batter and blueberries.
- Serve immediately, optionally with extra blueberries or whipped cream.
Notes
Make-ahead batter can be stored in the refrigerator for up to 24 hours. For air fryer cooking, set to 350°F and cook for 8-10 minutes.
