Description

These Crispy Sweet Potato & Red Lentil Patties are a delightful fusion of flavors and textures. The exterior is perfectly golden and crunchy, while the inside is soft and creamy, bursting with the natural sweetness of sweet potatoes and the earthy notes of red lentils.


Ingredients

  • For the Patties:
    • 2 medium sweet potatoes, peeled and cubed
    • 1 cup red lentils, rinsed
    • 1/2 cup breadcrumbs
    • 1/4 cup finely chopped onion
    • 2 cloves garlic, minced
    • 1 teaspoon ground cumin
    • 1 teaspoon smoked paprika
    • Salt and pepper to taste
    • 2 tablespoons olive oil for frying

Instructions

  1. In a pot, boil the sweet potatoes in salted water for about 15 minutes or until tender. Drain and mash them in a large bowl.
  2. In a separate pot, cook the red lentils in 2 cups of water for about 10-12 minutes until soft. Drain and add to the mashed sweet potatoes.
  3. Add breadcrumbs, onion, garlic, cumin, smoked paprika, salt, and pepper to the sweet potato and lentil mixture. Mix well until combined.
  4. Form the mixture into patties, about 2 inches in diameter.
  5. Heat olive oil in a skillet over medium heat. Fry the patties for 4-5 minutes on each side or until golden brown.
  6. Remove from the skillet and place on paper towels to absorb excess oil. Serve warm.

  • Make-ahead: The patties can be formed and refrigerated for up to 24 hours before frying.
