Ingredients

  • Chicken: 2 pounds boneless, skinless chicken breasts
  • Broth: 4 cups low-sodium chicken broth
  • Vegetables:
    • 1 cup diced carrots
    • 1 cup diced celery

  • Seasonings:
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon dried thyme
    • Salt and pepper to taste
  • Noodles: 12 ounces egg noodles
  • Dairy:
    • 1 cup heavy cream
    • 1/2 cup cream cheese

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the diced carrots, celery, and onion on top of the chicken.
  3. Pour in the chicken broth and sprinkle the garlic powder, onion powder, thyme, salt, and pepper over the mixture.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
  5. Remove the chicken, shred it with two forks, and return it to the crockpot.
  6. Add the egg noodles and stir to combine. Cover and cook on high for an additional 30 minutes, or until the noodles are tender.
  7. Stir in the heavy cream and cream cheese until melted and well combined. Cook for an additional 10 minutes.
  8. Serve hot, garnished with fresh parsley if desired.

  • This dish can be made ahead and stored in the refrigerator for up to 3 days.
  • To freeze, store in an airtight container for up to 3 months. Reheat on the stove with a splash of broth.
