A vibrant salad bursting with fresh flavors, combining crisp apples, sweet carrots, and a creamy citrus dressing.


Ingredients

  • 2 large carrots, peeled and grated
  • 2 medium apples (like Granny Smith or Honeycrisp), cored and chopped
  • 1 cup red cabbage, finely shredded
  • 1/2 cup raisins or dried cranberries
  • 1/2 cup walnuts or pecans, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon honey (or to taste)
  • Salt and pepper to taste

Instructions

  1. Prepare the Vegetables and Fruits: Peel and grate the carrots into a large mixing bowl.
  2. Core and chop the apples into small pieces and toss them with the grated carrots.
  3. Shred the red cabbage and add it to the bowl along with the chopped nuts and raisins.
  4. Prepare the Creamy Citrus Dressing by mixing Greek yogurt, mayonnaise, orange juice, lemon juice, honey, and seasoning in a separate bowl.
  5. Combine and toss the salad mixture with the dressing.
  6. Taste and adjust seasoning if necessary.
  7. Chill the salad for about 15 minutes in the refrigerator.
  8. Serve chilled or at room temperature, garnished as desired.

Notes

This salad can be made in advance; however, add the dressing just before serving to maintain crispness.
