Ingredients

- 2 large carrots, peeled and grated
- 2 medium apples (like Granny Smith or Honeycrisp), cored and chopped
- 1 cup red cabbage, finely shredded
- 1/2 cup raisins or dried cranberries
- 1/2 cup walnuts or pecans, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons fresh orange juice
- 1 tablespoon lemon juice
- 1 teaspoon honey (or to taste)
- Salt and pepper to taste
Instructions
- Prepare the Vegetables and Fruits: Peel and grate the carrots into a large mixing bowl.
- Core and chop the apples into small pieces and toss them with the grated carrots.
- Shred the red cabbage and add it to the bowl along with the chopped nuts and raisins.
- Prepare the Creamy Citrus Dressing by mixing Greek yogurt, mayonnaise, orange juice, lemon juice, honey, and seasoning in a separate bowl.
- Combine and toss the salad mixture with the dressing.
- Taste and adjust seasoning if necessary.
- Chill the salad for about 15 minutes in the refrigerator.
- Serve chilled or at room temperature, garnished as desired.
Notes
This salad can be made in advance; however, add the dressing just before serving to maintain crispness.
