Instructions
- Spiralize the cucumbers into noodle-like strands.
- In a large bowl, combine the spiralized cucumbers, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- If using, sprinkle feta cheese on top before serving.

- For a vegan option, omit the feta cheese.
