- 1 cup basmati rice
- 2 cups water
- 1 tablespoon curry powder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the basmati rice under cold water until the water runs clear.
- In a pot, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the curry powder and mixed vegetables, cooking for another 2-3 minutes.
- Stir in the rinsed rice and mix well to coat the rice with the spices.
- Add water and salt, bring to a boil, then reduce heat to low and cover the pot.
- Cook for 15-20 minutes or until the rice is tender and water is absorbed.
- Fluff the rice with a fork and garnish with fresh cilantro before serving.
Notes
- For a spicier version, add chili powder or fresh chilies.
- This dish can be served with yogurt or raita for added creaminess.
