    • 2 boneless, skinless chicken breasts (about 1 pound)
    • 1 tablespoon olive oil
    • Salt and pepper to taste
  • For the Alfredo Sauce:
    • 1 cup raw cashews (soaked in water for 4 hours)
    • 1 cup vegetable broth
    • 1 tablespoon nutritional yeast
    • 2 tablespoons lemon juice
    • 2 cloves garlic, minced
    • Salt and pepper to taste
  • For the Pasta:
    • 8 ounces fettuccine (gluten-free if desired)

Instructions

  1. In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then cook for 6-7 minutes on each side until golden brown and cooked through. Remove from heat and let rest.
  2. In a blender, combine soaked cashews, vegetable broth, nutritional yeast, lemon juice, minced garlic, salt, and pepper. Blend until smooth and creamy.
  3. Cook fettuccine according to package instructions. Drain and set aside.
  4. In the same skillet used for the chicken, add the Alfredo sauce and heat over low until warmed through.
  5. Slice the cooked chicken and add it to the sauce, stirring to combine.
  6. Toss the fettuccine in the sauce until well coated. Serve immediately.
