Ingredients

  • Chicken: 4 boneless, skinless chicken breasts (about 1.5 lbs), pounded to even thickness
  • Marinade: 1/2 cup brown sugar, packed; 1/4 cup soy sauce; 1/4 cup pineapple juice; 2 cloves garlic, minced; 1 teaspoon ground ginger; 1/2 teaspoon black pepper
  • Pineapple: 1 cup fresh pineapple, diced; 1 tablespoon olive oil; 1/4 teaspoon salt

Instructions

  1. In a bowl, whisk together brown sugar, soy sauce, pineapple juice, garlic, ginger, and black pepper to create the marinade.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
  3. Preheat your grill or grill pan to medium-high heat (about 375°F).
  4. Remove the chicken from the marinade and discard the marinade. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely caramelized.
