Instructions
- In a large pot, bring salted water to a boil and cook the elbow macaroni for 8-10 minutes until al dente. Drain and rinse under cold water to stop cooking.
- In a mixing bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, salt, and pepper. Mix until smooth and creamy.
- Add the cooled macaroni, chopped celery, red onion, and sweet pickle relish to the egg mixture. Stir gently until all ingredients are well combined.
