Ingredients
- Chicken: 4 boneless, skinless chicken breasts, cut into bite-sized pieces

- Tzatziki Sauce: 1 cup Greek yogurt, 1/2 cucumber (grated and drained), 2 cloves garlic (minced), 1 tablespoon fresh dill (chopped), 1 tablespoon lemon juice, salt and pepper to taste
- Broth: 2 cups chicken broth
- Vegetables: 1 cup cherry tomatoes, halved; 1/2 red onion, diced
- Seasoning: 1 teaspoon paprika, 1 teaspoon oregano, salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the chicken pieces, rice, tzatziki sauce, chicken broth, cherry tomatoes, red onion, and seasonings.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the rice is tender.
- Let it rest for 5 minutes before serving to allow the flavors to meld.
