- 4 boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup chicken broth
- 1 cup uncooked rice
- 1 cup frozen mixed vegetables
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large baking dish, combine the cream of mushroom soup, chicken broth, uncooked rice, garlic powder, onion powder, salt, and pepper.
- Place the chicken breasts on top of the mixture.
- Add the frozen mixed vegetables around the chicken.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
Notes
- For added flavor, marinate the chicken in your favorite seasoning before baking.
- Feel free to substitute the mixed vegetables with your choice of veggies.
- This dish can be made ahead of time and stored in the refrigerator before baking.
