Description

A simple and delicious one-pan meal featuring chicken and creamy mushroom sauce, baked to perfection.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup uncooked rice
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, combine the cream of mushroom soup, chicken broth, uncooked rice, garlic powder, onion powder, salt, and pepper.
  3. Place the chicken breasts on top of the mixture.
  4. Add the frozen mixed vegetables around the chicken.
  5. Cover the dish with aluminum foil and bake for 45 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.

Notes

  • For added flavor, marinate the chicken in your favorite seasoning before baking.
  • Feel free to substitute the mixed vegetables with your choice of veggies.
