Description
These Easter Birds Nest Cookies are a delightful treat that combines a crunchy exterior with a soft, chewy center. Each bite bursts with the sweet flavor of chocolate and the creamy richness of peanut butter, while the colorful candy eggs add a playful touch to this festive dessert.
Ingredients
Scale
- For the Cookies:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 1 cup creamy peanut butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- For the Nest Topping:
- 2 cups chow mein noodles
- 1 cup semi-sweet chocolate chips
- 1/2 cup peanut butter
- 1 cup candy-coated chocolate eggs
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and peanut butter until smooth and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Gently fold in the chow mein noodles until they are fully coated with the chocolate mixture.
- Once the cookies are cool, create a small indentation in the center of each cookie and fill it with the chocolate-coated noodles, forming a nest shape.
- Top each nest with a few candy-coated chocolate eggs and let set for about 30 minutes before serving.
Notes
- Make-ahead: The cookie dough can be prepared and refrigerated for up to 2 days before baking.
- Storage: Store cookies in an airtight container at room temperature for up to 5 days.
- Substitutions: Use almond butter instead of peanut butter for a nut-free option, or swap chow mein noodles for pretzel sticks for a different texture.
