  • Author: Tara
  • Total Time: 32 minutes
  • Yield: 24 cookies 1x
  • Diet: Vegetarian

Description

These Easter Birds Nest Cookies are a delightful treat that combines a crunchy exterior with a soft, chewy center. Each bite bursts with the sweet flavor of chocolate and the creamy richness of peanut butter, while the colorful candy eggs add a playful touch to this festive dessert.

Ingredients

Scale
  • For the Cookies:
    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1 cup brown sugar, packed
    • 1 cup creamy peanut butter
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 3 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
  • For the Nest Topping:
    • 2 cups chow mein noodles
    • 1 cup semi-sweet chocolate chips
    • 1/2 cup peanut butter
    • 1 cup candy-coated chocolate eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and peanut butter until smooth and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  7. In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  8. Gently fold in the chow mein noodles until they are fully coated with the chocolate mixture.
  9. Once the cookies are cool, create a small indentation in the center of each cookie and fill it with the chocolate-coated noodles, forming a nest shape.
  10. Top each nest with a few candy-coated chocolate eggs and let set for about 30 minutes before serving.

Notes

  • Make-ahead: The cookie dough can be prepared and refrigerated for up to 2 days before baking.
  • Storage: Store cookies in an airtight container at room temperature for up to 5 days.
  • Substitutions: Use almond butter instead of peanut butter for a nut-free option, or swap chow mein noodles for pretzel sticks for a different texture.
