Description

A colorful and festive cake that combines Funfetti and dark chocolate, perfect for celebrating Easter with family and friends.


Ingredients

  • 1 Funfetti or white cake mix (plus ingredients on the back: eggs, oil, and water)
  • 1 dark chocolate cake mix (plus ingredients on the back: eggs, oil, and water)
  • 1 four-color box of food coloring
  • Shortening (to grease the Bundt cake pan)
  • Flour (to dust the Bundt cake pan)
  • Candy melts (white, pink, or yellow) or store-bought frosting
  • 1 cup sweetened coconut flakes
  • ½ cup semi-sweet chocolate chips
  • ½ cup heavy whipping cream
  • 12-ounce package of chocolate candy eggs
  • 1 3-inch tall chocolate bunny (or something similar)
  • Pastel or Easter-colored sprinkles

Instructions

  1. Preheat your oven to 350°F and spray a 15x10x1-inch jelly roll pan with non-stick cooking spray. Set it aside.
  2. Mix the Funfetti cake mix according to the package directions, then divide the batter into 3-4 bowls. Add a few drops of different food coloring.
  3. Spoon the white batter into the prepared pan, then add spoonfuls of each colored batter randomly throughout.
  4. Use a knife or spatula to swirl the colors lightly; avoid over-mixing.
  5. Bake for 15-20 minutes or until a toothpick inserted comes out clean. Allow the cake to cool completely in the pan.
  6. Use Easter-themed cookie cutters to cut out shapes from the cooled cake.
  7. Grease a 12-cup Bundt cake pan thoroughly with shortening.
  8. Prepare the chocolate cake according to the package directions and pour half the batter into the Bundt pan.
  9. Place the cut-out cake pieces upside down around the edges of the pan.
  10. Cover the pieces with the remaining chocolate batter and bake for 40 minutes.
  11. Let the Bundt cake cool for 20 minutes before inverting it onto a serving plate.
  12. Melt the chocolate chips and whipping cream in a microwave-safe bowl and drizzle over the cake.
  13. Add colored coconut flakes to the center of the cooled cake to resemble grass and top with chocolate candy eggs and a chocolate bunny.

Notes

You can prepare the colored Funfetti cake a day in advance. Keep it covered to maintain freshness. Adjust baking times if using an air fryer.
