- 1 dark chocolate cake mix (plus ingredients on the back: eggs, oil, and water)
- 1 four-color box of food coloring
- Shortening (to grease the Bundt cake pan)
- Flour (to dust the Bundt cake pan)
- Candy melts (white, pink, or yellow) or store-bought frosting
- 1 cup sweetened coconut flakes
- ½ cup semi-sweet chocolate chips
- ½ cup heavy whipping cream
- 12-ounce package of chocolate candy eggs
- 1 3-inch tall chocolate bunny (or something similar)
- Pastel or Easter-colored sprinkles
Instructions
- Preheat your oven to 350°F and spray a 15x10x1-inch jelly roll pan with non-stick cooking spray. Set it aside.
- Mix the Funfetti cake mix according to the package directions, then divide the batter into 3-4 bowls. Add a few drops of different food coloring.
- Spoon the white batter into the prepared pan, then add spoonfuls of each colored batter randomly throughout.
- Use a knife or spatula to swirl the colors lightly; avoid over-mixing.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean. Allow the cake to cool completely in the pan.
- Use Easter-themed cookie cutters to cut out shapes from the cooled cake.
- Grease a 12-cup Bundt cake pan thoroughly with shortening.
- Prepare the chocolate cake according to the package directions and pour half the batter into the Bundt pan.
- Place the cut-out cake pieces upside down around the edges of the pan.
- Cover the pieces with the remaining chocolate batter and bake for 40 minutes.
- Let the Bundt cake cool for 20 minutes before inverting it onto a serving plate.
- Melt the chocolate chips and whipping cream in a microwave-safe bowl and drizzle over the cake.
- Add colored coconut flakes to the center of the cooled cake to resemble grass and top with chocolate candy eggs and a chocolate bunny.
Notes
