Instructions
- Preheat the oven to 350°F (175°C).
- Cream the butter and sugar in a large bowl until light and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- Whisk together the flour, cinnamon, baking soda, and salt in another bowl.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until edges are lightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Spoon dulce de leche between two cookies to create a sandwich.
