  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • For the Crunchy Streusel Topping:
  • ½ cup all-purpose flour (65g)
  • ⅓ cup packed brown sugar (70g)
  • ½ teaspoon cinnamon
  • 3 tablespoons unsalted butter (45g), cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray.
  2. Mash the ripe bananas in a large mixing bowl until smooth, leaving a few chunks for texture.
  3. Stir in the melted butter with the bananas until combined.
  4. Mix in the sugar, followed by the beaten eggs and vanilla extract, stirring gently until just blended.
  5. Whisk together the flour, baking soda, and salt in a separate small bowl.
  6. Fold the dry mixture into the wet banana mixture using a spatula until just combined.
  7. Prepare the streusel topping by mixing flour, brown sugar, and cinnamon in a small bowl. Cut in cold cubed butter until it resembles coarse crumbs.
  8. Pour the batter into the prepared loaf pan and spread it evenly, then sprinkle the streusel topping over the batter.
  9. Bake for 60-70 minutes, checking for doneness at the 55-minute mark with a toothpick.
  10. Let the banana bread cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
