- ½ cup all-purpose flour (65g)
- ⅓ cup packed brown sugar (70g)
- ½ teaspoon cinnamon
- 3 tablespoons unsalted butter (45g), cold and cubed
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray.
- Mash the ripe bananas in a large mixing bowl until smooth, leaving a few chunks for texture.
- Stir in the melted butter with the bananas until combined.
- Mix in the sugar, followed by the beaten eggs and vanilla extract, stirring gently until just blended.
- Whisk together the flour, baking soda, and salt in a separate small bowl.
- Fold the dry mixture into the wet banana mixture using a spatula until just combined.
- Prepare the streusel topping by mixing flour, brown sugar, and cinnamon in a small bowl. Cut in cold cubed butter until it resembles coarse crumbs.
- Pour the batter into the prepared loaf pan and spread it evenly, then sprinkle the streusel topping over the batter.
- Bake for 60-70 minutes, checking for doneness at the 55-minute mark with a toothpick.
- Let the banana bread cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
