A refreshing and flavorful Elote Pasta Salad that combines the classic flavors of Mexican street corn with pasta for a delightful dish.


Ingredients

  • 8 oz pasta (elbow or rotini)
  • 2 cups corn (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. If using fresh corn, grill or roast it until slightly charred. If using frozen, cook until heated through.
  3. In a large bowl, combine the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  4. Add the cooled pasta, corn, cotija cheese, and cilantro to the bowl. Mix well to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a spicier kick, add diced jalapeños.
  • This salad can be made a day in advance for better flavor.
