A refreshing and flavorful Elote Pasta Salad that combines the classic flavors of Mexican street corn with pasta for a delightful dish.
Ingredients

- 8 oz pasta (elbow or rotini)
- 2 cups corn (fresh or frozen)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup cotija cheese, crumbled
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- If using fresh corn, grill or roast it until slightly charred. If using frozen, cook until heated through.
- In a large bowl, combine the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Add the cooled pasta, corn, cotija cheese, and cilantro to the bowl. Mix well to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a spicier kick, add diced jalapeños.
- This salad can be made a day in advance for better flavor.
- Feel free to substitute with your favorite pasta shape.
