  • For the crust:
    • 1 ½ cups all-purpose flour

    • 34 tablespoons ice water

    • 1 cup sharp cheddar cheese, shredded
    • 1 cup heavy cream
    • 3 large eggs
    • 1 teaspoon Old Bay seasoning
    • 1/2 teaspoon black pepper
    • 1/4 cup green onions, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and salt for the crust. Cut in the butter until the mixture resembles coarse crumbs.
  3. Add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  4. Roll out the dough on a floured surface to fit a 9-inch pie pan. Place the crust in the pan and trim the edges.
  5. In a skillet over medium heat, sauté the shrimp until pink, about 3-4 minutes. Remove from heat and let cool.
  6. In a bowl, whisk together the heavy cream, eggs, Old Bay seasoning, and black pepper.
  7. Spread the sautéed shrimp and green onions evenly over the crust, then pour the cream mixture on top. Sprinkle with cheddar cheese.
  8. Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown. Let cool for 10 minutes before serving.
