- For the crust:
- 1 ½ cups all-purpose flour

- 3–4 tablespoons ice water
- For the filling:
- 1 pound fresh Florida shrimp, peeled and deveined
- 1 cup sharp cheddar cheese, shredded
- 1 cup heavy cream
- 3 large eggs
- 1 teaspoon Old Bay seasoning
- 1/2 teaspoon black pepper
- 1/4 cup green onions, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine flour and salt for the crust. Cut in the butter until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Roll out the dough on a floured surface to fit a 9-inch pie pan. Place the crust in the pan and trim the edges.
- In a skillet over medium heat, sauté the shrimp until pink, about 3-4 minutes. Remove from heat and let cool.
- In a bowl, whisk together the heavy cream, eggs, Old Bay seasoning, and black pepper.
- Spread the sautéed shrimp and green onions evenly over the crust, then pour the cream mixture on top. Sprinkle with cheddar cheese.
- Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown. Let cool for 10 minutes before serving.
Notes
- This pie can be made a day in advance; simply reheat in the oven at 350°F (175°C) for 15-20 minutes before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For a lighter version, substitute half-and-half for heavy cream.
