Description

  • For the Chicken:
    • 4 boneless, skinless chicken breasts (about 1.5 lbs)
    • 4 cloves garlic, minced
    • 2 tablespoons fresh rosemary, chopped
    • 2 tablespoons fresh thyme, chopped
    • 1/4 cup olive oil
    • Salt and pepper to taste
  • For the Carrots:
    • 1 lb baby carrots, peeled
    • 2 tablespoons honey
    • 1 tablespoon olive oil
    • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. Coat the chicken breasts in this mixture and let marinate for at least 15 minutes.
  3. While the chicken marinates, toss the baby carrots with honey, olive oil, salt, and pepper in a separate bowl.
  4. Place the marinated chicken breasts on a baking sheet lined with parchment paper.
  5. Arrange the carrots around the chicken on the baking sheet.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the carrots are tender and slightly caramelized.
  7. Remove from the oven and let rest for 5 minutes before serving.
