Description

A delicious and healthy meal featuring garlic herb chicken served with a variety of roasted vegetables.


Ingredients

  • 4 chicken breasts
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups broccoli florets
  • 2 cups bell peppers, sliced
  • 2 cups zucchini, sliced
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, minced garlic, oregano, thyme, salt, and pepper.
  3. Coat the chicken breasts with the garlic herb mixture.
  4. Place the chicken on a baking sheet.
  5. In another bowl, toss the broccoli, bell peppers, and zucchini with balsamic vinegar and a pinch of salt.
  6. Spread the vegetables around the chicken on the baking sheet.
  7. Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
  8. Let it rest for a few minutes before serving.
