  • For the Cabbage Slaw:
    • 2 cups green cabbage, finely shredded
    • 1 cup carrots, grated
    • 1/4 cup mayonnaise
    • 1 tbsp apple cider vinegar
    • 1 tsp sugar
    • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced salmon, breadcrumbs, parsley, garlic, beaten egg, Dijon mustard, salt, and pepper. Mix until well combined.
  2. Form the mixture into patties, about 2 inches in diameter.
  3. Heat olive oil in a skillet over medium heat (about 350°F).
  4. Cook the patties for 4-5 minutes on each side, or until golden brown and cooked through.
  5. While the patties are cooking, prepare the cabbage slaw by mixing the shredded cabbage, grated carrots, mayonnaise, apple cider vinegar, sugar, salt, and pepper in a separate bowl.
  6. Once the patties are done, serve them hot with a generous side of cabbage slaw.
