Description

Garlic Lime Chicken and Roasted Broccoli Quinoa Bowls are a nutritious and flavorful meal prep option that combines tender chicken marinated in garlic and lime with roasted broccoli and quinoa.


Ingredients

  • 2 chicken breasts
  • 4 cloves garlic, minced
  • 1 lime, juiced
  • 2 cups broccoli florets
  • 1 cup quinoa
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix minced garlic, lime juice, olive oil, salt, and pepper.
  3. Marinate the chicken breasts in the garlic lime mixture for at least 30 minutes.
  4. While the chicken is marinating, rinse the quinoa and cook it according to package instructions.
  5. Place the broccoli florets on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  6. Roast the broccoli in the oven for 15-20 minutes until tender.
  7. Cook the marinated chicken in a skillet over medium heat for 6-7 minutes on each side or until fully cooked.
  8. Assemble the bowls by placing quinoa at the bottom, topped with roasted broccoli and sliced garlic lime chicken.
