Garlic Parmesan Spinach Stuffed Mushrooms are a delightful combination of crispy, golden-brown mushroom caps filled with a creamy, savory mixture of spinach, garlic, and Parmesan cheese. Each bite offers a satisfying crunch followed by a rich, umami flavor that dances on the palate, making them an irresistible appetizer.

Ingredients

Scale
  • Mushrooms: 12 large cremini or button mushrooms, stems removed
  • Filling:
    • 1 cup fresh spinach, chopped
    • 2 cloves garlic, minced
    • 1/2 cup cream cheese, softened
    • 1/4 cup grated Parmesan cheese
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon salt
    • 1/4 teaspoon red pepper flakes (optional)
  • Topping:
    • 1/4 cup breadcrumbs
    • 2 tablespoons melted butter
    • 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the minced garlic in a little olive oil until fragrant, about 1 minute.
  3. Add the chopped spinach and cook until wilted, about 2-3 minutes.
  4. In a mixing bowl, combine the sautéed spinach and garlic with cream cheese, 1/4 cup Parmesan cheese, salt, pepper, and red pepper flakes. Mix until well combined.
  5. Stuff each mushroom cap generously with the spinach mixture.
  6. In a separate bowl, mix breadcrumbs, melted butter, and 2 tablespoons Parmesan cheese. Sprinkle this mixture over the stuffed mushrooms.
  7. Place the stuffed mushrooms on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.

Notes

  • Make-ahead: You can prepare the stuffed mushrooms a day in advance and store them in the refrigerator. Bake just before serving.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days.
  • Substitutions: Use feta cheese instead of Parmesan for a tangy flavor, or swap spinach for kale for a different green.
