- 8 oz dark chocolate, chopped
- 4 large eggs, separated
- 1/2 cup granulated sugar
- 1 cup heavy cream
- 1 tsp vanilla extract
- Pinch of salt
- Ghost-shaped chocolate decorations (for garnish)
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth.
- In a separate bowl, whisk the egg yolks with half of the sugar until pale and creamy.
- Fold the melted chocolate into the egg yolk mixture.
- In another bowl, beat the egg whites with a pinch of salt until soft peaks form, then gradually add the remaining sugar and beat until stiff peaks form.
- In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form.
- Gently fold the egg whites into the chocolate mixture, followed by the whipped cream until fully combined.
- Divide the mousse into serving dishes and refrigerate for at least 2 hours.
- Before serving, garnish with ghost-shaped chocolate decorations.
Notes
- Ensure the chocolate is cooled slightly before mixing with the egg yolks to prevent curdling.
- For a lighter mousse, you can use whipped aquafaba instead of egg whites.
- Store any leftovers in the refrigerator for up to 3 days.
